Blueberries are magical and oh-so American, oh-so summer. I watched a Good Eats episode about blueberries a long time ago and was memorized by their nutritional punch and native pedigree. I decided to start liking them in things besides muffins. Although, these cooks illustrated muffins take it to a whole new level. Try um.

But that’s not what we are talking about today…we are talking about blueberry shortcake. And ice cream with whiskey and honey.

I picked up a pint of fresh blue berries from a local farmer at Eastern Market on my way home from yoga. The sun was shining. I didn’t take a bag, so I carried the pint home for 15 min starting at them without eating even one. Tough. But would you really blame me if I had?? Look at them!

Throw those in a pan with some lemon, sugar and pinch of cinnamon.

Add heat. Magic happens…

Oh man. They were awesome.

I got home from yoga last night and wanted some nachos. During the end of class savasana the lights went down and we were asked to set intentions, my intention was to eat black beans and cheese on a chip.

From last weeks bag I had a squash, some lettuce and the beets left over. How was that going to translate to nachos ? Hmmm.

The lettuce was a bit wilted so I threw that and the squash into a pan and added some jarred salsa. Beans, chips and cheese went under the broiler. Yum.

I ate it before I took any pictures.  Sorry, my intentions just took over.

But here are those pretty little squashes cooking up…

Oh, you want to know about the beets? Um…still in the fridge. I’m planning on roasting them, but need to look up some recipes and figure out how to cut them up. Either that or I will have red juice with dinner!

I went to yoga last night at my local yoga place. It was great! Just the right amount of difficult, just the right amount of relaxation. You see, along with my poor eating habits comes low energy. This has increased as I have…well…matured. When I was younger I danced hours and hours a day and never got tired. Not so much now.

DC has been good for me because of the walking. But I needed to add something because eating better has upped my energy, so in comes the yoga. I’m so into Eastern stuff now, apparently.

I woke up today with sore muscles. The good kind. My body seemed really pleased to have been stretched and worked a little.

Another plus: I didn’t want anything heavy after the 1.5 hours of yoga and the 20 min walk home in the 90 degree weather. A salad was just perfect. But full disclosure…I did have some wedding cake later on. You know, even after being frozen for a year it was still REALLY yummy.

The Story

I'm skeptical of vegetables and joined a CSA to see if I can make friends with them. This blog exists so that I can hold myself accountable to eating what I paid for and document what I can do with lots of local produce!
