When I was little, my grandmother poached eggs for me for breakfast, lunch and dinner. I just loved breaking the egg over toast and trying to get an equal amount on each little square. It was such a triumph when I was old enough to help her make it. Now, I eat them all the time, and it my favorite way to cook an egg.

So, of  course, its what I made last night.

I poached the egg and put it on toast, and then made an amazing salad with the head of lettuce. The salad was pretty big for me and I was a little nervous about finishing it. But as soon as I started eating it…wow. It was tender and flavorful. They aren’t kidding, local food really is different.

It was similar with the egg. It was an egg…but tasted more…eggy and fresh.
